Chinese rice wine = sweet rice, Chinese yeast balls and the optional wine or bakery yeast. 30 to 40 days of fermentation with 15% to 20% alcohol. End product looks and tastes like unfiltered sake. I also make table wine, I prefer cranberry wine. I can get Makku beer. I hope you can taste test and compare. Thanks for your input.
I agree, I don't like any alcoholic beverages with sugar. When I make Chinese rice wine, I make sure all the sugar turns to alcohol.
